Why not bake a cake? A chocolate cake! In this mini episode Randy shows you the tips and tricks you need to make the perfect chocolate layer cake to serve at your dinner party. You can serve a single cake with confectioners sugar to make things easier or take it to new heights by making a layer cake. As an alternative to overly sweet frosting, serve with sweetened vanilla mascarpone. Give it a shot, it’s not scary.

  • ½ cup cocoa powder (unsweetened)
  • ½ cup of buttermilk
  • 1 ½ cups cake flour
  • ¾ teaspoon baking soda
  • 1 ½ cups of sugar
  • 1 stick of room temp butter
  • 2 large room temp eggs, beaten together
  • salt


  1. Preheat your oven to 350 degrees. Butter your two baking pans and then line the bottoms with parchment rounds. Butter the rounds also.
  2. Whisk the cocoa powder with ½ cup of warm water. Then whisk buttermilk with ½ cup warm water. Set aside.
  3. Mix the salt, baking soda and flour together with a fork.
  4. Using the mixer REALLY incorporate the sugar and butter together until it is pale yellow and fluffy. Probably longer than you think. It will seem slightly granular.
  5. Add eggs slowly and continue to mix until smooth and fluffy. Add the cocoa mixture and beat it in.
  6. Add the flour mixture in three additions, alternating with the buttermilk mixture. Pour into the two prepared pans.
  7. Bake for around forty minutes or until a skewer comes out clean after poking it in the cake.
