INGREDIENTS

  • 5 oz Leafy Greens (Baby Spinach, & Spring Mix)
  • ½ – 1 Pint Golden Cherry Tomatoes, Cut in Half
  • Generous Pinch of Salt
  • Freshly Ground Black Pepper
  • Drizzle of Olive Oil
  • 1-2 tsp Dijon Mustard (Adjust to Taste)
  • 1-2 tbsp White Wine Vinegar ((Adjust to Taste)
  • Fresh Thyme

DIRECTIONS

  1. Place washed green in a large serving bowl and set aside gently covered with a damp paper towel to retain freshness.
  2. To prepare the dressing, add cherry tomatoes halves to a medium mixing bowl. Sprinkle a generous pinch of salt and black pepper over the tomatoes and toss. Add the olive oil, dijon mustard, white wine vinegar, and fresh thyme. Toss well and adjust to taste. Let sit for 1 hour.
  3. To serve, remove the paper towel from the greens. Top the greens with the tomatoes (strained from the liquid). Then gently drizzle some the dressing liquid over the salad. Be sure not to over-dress your salad.
  4. Serve immediately.
